- Prepare 1 muskmelon (skin removed, pressure cooked in 3 whistles and chopped)

- Make ready 1/2 cup boiled fresh green peas
- Take 5-6 pav
- Get 1 tbsp ginger-garlic paste
- Get 1 cup chopped onions
- Get 1 cup chopped tomatoes
- Get 1 tbsp sugar
- Take 1 tsp cumin seeds
- Prepare 1 tsp turmeric powder
- Make ready 1 tsp garam masala
- Prepare 1 tbsp dried coriander leaves
- Take 1 tsp raw mango powder
- Take 2 tbsp dabeli masala (made by blending together red chilies, cloves, cinnamon stick, cumin-coriander seeds)
- Make ready 1/2 cup red chutney (made from jaggery, tamarind & dates)
- Take 1/2 cup green chutney (made by blending coriander leaves, mint leaves, green chilies, lemon juice, water, salt)
- Prepare 2-3 tbsp nylon sev
- Get 2-3 tbsp fried spicy daal
- Make ready 1 cup salty peanuts
- Take 1 cup dry grated coconut
- Take 1 tsp chaat masala
- Get 1 cup chopped musk melon
- Take 6-7 halved dry cherries
- Make ready 1 tsp red chilli powder
- Take as needed Butter
- Take as needed Oil
- Prepare as needed Water
- Get to taste Salt
Instructions to make Muskmelon Dabeli:
- For the filling mixture, add the muskmelon, cauliflower, potatoes, green peas into a bowl and mash well.
- In a thick bottomed vessel melt heat 1-2 tbsp oil. Add 1 tsp cumin seeds & the above-mashed mixture & saute. Add the vegetable stock remained while boiling the vegetables & muskmelon. Mix well.
- Then add 1 tbsp ginger-garlic paste, 1 cup chopped tomatoes, 1 cup chopped onions. Mix well, cover and let it steam nicely.
- Add 1 cup of water and mix. Cover & let it remain for 6-7 minutes on medium flame. Add 1 tbsp sugar, 1 tsp raw mango powder, 1 tsp turmeric powder, 1 tsp garam masala and salt as per taste. Mix. Add 2 tbsp dabeli masala, 1 tbsp dried coriander leaves and give it a quick mix. Let the mixture thicken. Remove the filling mixture on a plate.
- For making masala peanuts, heat 1 tbsp oil in a pan. Add 1 cup salty peanuts, 1 tsp chaat masala & 1 tsp red chilli powder. Roast the peanuts well. Remove from pan & let it cool.
- Spread the filling mixture on a plate. Spread 1 cup dry grated coconut on it, then some masala peanuts, musk melon & some dry cherries. Keep it aside.
- To assemble the Dabeli, cut the pav in between without breaking into apart. Spread red chutney on one side & green chutney on the other. On the base slice spread filling mixture. Top with masala peanuts, fried spicy daal, chopped musk melon, chopped onions, & nylon sev. Close it with top slice.
- Melt some butter in a pan and roast the filled pav from both sides. Remove. Top it with some chopped onions, sev, masala peanuts, cherries and serve with chutneys.
