I had fresh peas from the garden and remembered my grandmother making this recipe although I think she used heavy cream. I like that it is made with milk and not heavy cream. Scrape and cut carrots in small pieces; boil with fresh green peas (shelled). Miz butter and flour in saucepan over heat; and vegetable stock.

Instructions to make Creamed Peas (and sometimes carrots):
  1. Place veggies and 1/4 cup water in a saucepan. Bring to a simmer over medium heat. Add sugar, salt, and pepper. Stir to combine. Continue to simmer, covered, about 2 minutes.
  2. Add milk and heat back up to almost simmering. Stir 2 tsp cornstarch and last tbs water together in a small bowl. Slowly pour into saucepan, stirring constantly.
  3. Continue cooking until sauce thickens, stirring constantly to prevent lumps. Taste and adjust seasoning as desired. If sauce seems too thin stir an additional tsp cornstarch into a little more water and mix in. Serve hot and enjoy!

When served, sprinkle with chopped parsley. Cook vegetables according to directions on package. Peas and pearl onions are such a classic combination. Bird's Eye makes a frozen peas and pearl onions that I have loved for years, but lately I have had touble finding it. Delicious creamed peas and potatoes, with garden peas and new potatoes combined with a creamy white sauce and some red onion for a comforting side dish.
