Steps to make Crunchy rolls:
- Mix ghee in all-purpose flour. Rub well
- Then slowly add lukewarm water so as to form tight dough.
- Cover the dough with samp cloth and keep aside for half an hour.
- While dough is at rest we make sugar syrup.
- Pour sugar in a pan. Add water. Add cardamom powder and kesar. Turn on the flame and keep stirring the mixture.
- Slowly sugar melts and boiling of mixture starts.
- When Mixture is little thick then take a drop of sugar syrup between two fingers and test the thread.
- If single thread consistency is formed then put off the flame.
- Now heat oil in pan to fry crunchy rolls.
- Take the dough and knead well.
- Take a little portion of dough and form a small round chapatti. There are two semicircles in this chapatti.
- Let one semicircle remain untouched and from other semicircle cut thin strips.
- Roll the untouched semicircle on finger and apply little water on it. The water acts as glue
- Now slowly start folding each strip of the semicircle on finger. The ends of strips get attached to semicircle rolled on finger. Press the ends of strip tight on semicircle dough. Slowly slide out the roll from finger. Roll is ready to be fried
- Make Rolls of all the dough.
- Heat oil in a pan.Now on slow flame fry all the rolls.
- When crispy golden take out the rolls Immediately dip in sugar syrup.
- Keep crunchy rolls in sugar syrup for fifteen minutes.
- Take out from sugar syrup and garnish with pistachios. Mouthwatering CRUNCHY ROLLS are ready
