Steps to make Dhokla:
- Grease a steamer pan with ¼ to ½ tsp oil.take besan (gram flour) in a mixing bowl Add turmeric powder, a pinch of asafoetida, lime juice and ginger-green chilies paste and salt, curd. add water or as required to make thick yet flowing water. stir to a smooth thick batter without any lumps.
- Eventually bring to a boil 2 to 3 cups of water in a steamer pan. then add eno or fruit salt in to batter, eno makes the dhokla soft and fluffy. Begin to stir the eno with the batter briskly and quickly.
- Now pour the dhokla batter in the greased pan, Place the pan in a steamer. The water should already be boiling or hot when you place the pan with the dhokla batter. Steam for 15 to 20 minutes on a medium to high flame. Dhokla is ready after 17 minutes. After few minutes cut it to diamond or square shape.
- For tempering :
- in a small pan, heat oil. add mustard seeds ,add the cumin seeds, curry leaves and chopped green chillies, then add water and sugar mix well and allow this mixture to s boil.
- Now pour this mixture evenly on dhokla.set it for few minutes serve at room temperature. Taste is yummy 😋
