  1. Take 2 cups whole wheat flour /atta
  2. Take 1/2 cup ghee + 4 tsps ghee
  3. Make ready 2 tbsps white til or sesame seeds
  4. Prepare 1/4 cup gum resin(optional)
  5. Take 1/2 cup almonds
  6. Take 1/2 cashews
  7. Prepare 1/2 cup makhana/lotus seeds
  8. Get 1/2 tsp ginger powder/soonth
  9. Take 3/4 cup sugar,granulated or powdered
  10. Take 1 tbsp melon seeds/magaz
Steps to make Punjabi Panjiri:
  1. Heat 1/2 cup of ghee in a heavy-bottomed pan or non-stick pan, add wheat flour and cook on medium heat for 20 -25 minutes while stirring continously. The flour will gradually turn golden brown and aromatic. Take care it doesnt brown too much.
  2. Dry roast sesame seeds slightly in another pan.tranfer onto a plate and set aside.
  3. Take ghee in a pan and saute almonds for 2-3 minutes, transfer into the mortar and coarsely grind almonds, set aside in the plate.
  4. Add cashews to the ghee and saute for 4 minutes, coarsely grind and transfer to a plate.
  5. If using gum resin, add gum resin roast for 1 minute until the grains all puff up, set aside in a plate.
  6. In the leftover ghee now just toss in the makhana and slightly roast them.set aside.
  7. In a large bowl, transfer the roasted atta, add almonds. cashews, sesame seeds, gum resin, melon seeds, ginger powder. Add sugar and mix well with your hands,I prefer the crunch of sugar..hence I use granulated sugar but you can use powdered sugar too.
  8. Rich and tasty panjiri is ready
  9. Serve as required. The remaining panjiri can be stored in an airtight container for up to a month in the winter season.
