- Place the flour and the salt in a large bowl, cut the butter into small cubes and add to bowl.
- Rub the butter and flour inbetween your fingers until it resembles breadcrumbs. Add the water, continue mixing and gently knead into a ball. Place in the fridge for 10-15 mins.
- In the meantime, preheat oven to 180C.
- Roll out the pastry to your preferation, place in quiche dish, trim the edges.
- Cover the pastry case with greaseproof paper and fill with baking beans or dried beans.
- Bake for 12-15 minutes.
- Once pastry is golden, remove from oven (remove greaseproof paper & beans)
- FILLING:
- Fry the bacon in a dash of oil till lightly brown, remove from pan.
- Dice the onion & fry until soft.
- Place the fried bacon & onion into the pastry case and spread out evenly.
- Whisk together the eggs, cream, cheese and add the salt and pepper. Pour onto the pastry and bake for approx 30-40 mins.
