  3. Take 1/2 onion chopped

Steps to make Frittata:
  1. Heat oven to 350°F
  2. Add eggs salt pepper and cheese to a large mixing bowl and mix well set aside
  3. In a large pot cook the potatoes in salted water. Add potatoes to boiling water cooking 5 to 7 minutes
  4. While potatoes are cooking, in a skillet over medium heat cook the onions with 1 tablespoon of vegetable oil until brown and tender about 2 minutes stirring often
  5. Add sausage to the onions, cooking 5 minutes stirring often
  6. Drain potatoes and add to the skillet
  7. Add the egg mixture to the skillet, mixing well with other ingredients
  8. Cook over medium heat 2 minutes, occasionally lifting edge with a spatula and tilting skillet to allow uncooked egg to flow underneath. Do not stir
  9. Reduce heat to medium low and cook another 3 minutes until eggs are firm on the bottom
  10. Remove skillet from stove top and place in from the oven until eggs are firm about 10 minutes
  11. Remove from oven and cut into wedges. Top with tomatoes and green onions and serve. Also top with crumbled cooked bacon
  12. May also top with 3/4 cup shredded cheese immediately prior to placing into oven
