- In a mixing bowl, whisk - together eggs, milk, and cheese. Stir in the salt and pepper. Set aside.
- Heat olive oil in an non stick pan. proof, on medium heat. Add the onions and sauté until translucent, about 4-5 minutes. Add the garlic and tomatoes (if using) and cook a minute more.
- Add the chopped spinach, a handful at a time, mix with the onions. Do not overcook the the Spinach. Add salt and mix well.
- Add the egg mixture, spread the mixture out evenly on bottom of the pan. Spread the egg completely and add a little more cheese to top and mix a little.
- Simmer the flame on low and cook till done and then flip and turn and immediately serve hot.
- Cut into wedges and serve.
