- move the onion mixture to one side of the skillet and place chicken into the skillet. cook for about 5 minutes on each side, moving the onion mixture around a bit
- arrange the chicken on a bed of the onion mixture. place the entire skillet into the oven.
- chop the potatoes and mix them with the onion mixture, taking the skillet out of the oven. place the other trigs of rosemary on top and place the skillet back in the oven
- leave it alone for about an hour, periodically checking on it
- when chicken has a deep, golden brown skin atop it, remove it from the oven. plate it, it can be served immediately
