- Cut the sweet potato into 1 cm slices and soak in a bowl of water. Combine all the seasoning ingredients except the salt in a separate bowl.
- Microwave the potato slices until tender. (It took me 4.5 minutes at 600 W.)
- Heat oil in a pan and saute the sweet potato slices on both sides. Turn off the heat and add the combined seasoning ingredients.
- Shake the pan to distribute the seasoning ingredients evenly (the sauce should thicken up with residual heat. If it doesn't, cook over low heat until it does).
- Add a pinch of salt to finish.
- Good for bento, too!
- I edited the recipe to reduce the amount of katakuriko. Adjust the amount to taste.
