  2. Start frying the onions until they are soft
  3. Once the initial moisture is cooked off start adding a little cider to cover the base of the pan. Reduce the onion and keep adding cider slowly
  4. Adding a little dark sugar and balsamic vinegar, will help the onions caramelise. Add juniper berries, paprika, pepper, chilli and salt to taste
  5. Once the onions are fairly dry add a little dash of oil, and a spoonful or two of flour.. Stir in water slowly and keep stiring until it's smooth to add a little body to the sauce
