Steps to make Punjabi Pinnies:
  1. Take Clarified Butter in a wok and melt it in the wok. Moderately heated Clarified Butter is required to roast Edible Gum. Add of Edible Gum in the wok and roast on the low - medium flame for 3 minutes until they are Golden Brown. Drain them out after roasting.
  2. Add Almonds in the wok and roast them on the medium flame for 2 minutes until they expand and colour changes. Drain them out after roasting. Add Cashews in the wok and roast them on the medium flame until they are light Brown. Drain them out after roasting.
  3. Dry roast Muskmelon Seeds until they expand and their colour changes on the high flame for 2 minutes. Roast ½ cup of the grated dry coconut while continuously stirring it for a minute.
  4. Filter the heated clarified butter using a strainer and add more clarified butter in it. Take Wheat Flour and roast on the medium flame while continuously stirring it until golden brown for 15 minutes. Switch off the flame when the fragrance is soothing and stir it for a while.
  5. Coarsely grind the roasted Edible Gum along with roasted Cashews, roasted Almonds but keep some whole without grinding,mix them. Add the crushed coconut in it, roasted muskmelon seeds,whole almonds and cashews and mix all the Ingredients when they are hot. Add desi sugar powder and mix all the Ingredients.Add Cardamom Powder and mix them. The mixture is ready for the Pinnies.
  6. Lift some mixture and bind it into the round shaped ball. Prepare all the Pinnis in the same way. Store them in a container and consume for the 2-3 month
