  4. Place cooled roasted vegetables on a mixing bowl. Chop herbs and fennel fronds. Add to bowl. Add vinaigrette and toss. Adjust salt as needed. Serve.

Drizzle with the oil and toss with your hands to coat each floret. Mix together the cumin and fennel seeds, and the celery salt. To serve, smear cauliflower and fennel. Cut the fennel in half and remove the heart with a knife. Roasting the fennel caramelizes its natural sweetness, and it becomes very tender.
